Creamy Avocado and Saucy Pork Tostadas

Course: Dinner, Mexican Food

Ingredients:

For the Creamy Avocado:

  • 2 ripe avocados

  • 1/2 teaspoon salt (adjust to taste)

  • Juice of 1/2 lime (about 1 tablespoon)

  • 1 tablespoon sour cream or Greek yogurt

For the Pico de Gallo:

  • 2 medium-sized tomatoes, diced

  • 1/4 cup white or red onion, diced

  • 1 jalapeño, diced

  • 2 cloves garlic, minced

  • Juice from 1/2 lime

  • 1/4-1/2 cup cilantro, chopped

  • Salt and Pepper to taste

For the Saucy Pork:

  • 1 tablespoon olive oil

  • 1 pound ground pork

  • Taco seasoning mix (I like Siete)

  • 2 tablespoons tomato paste

For the Lime Crema:

  • 2 tablespoons sour cream or Greek yogurt

  • 1 teaspoon lime juice

  • Salt to taste

For Assembling the Toastadas:

  • 8 homemade or store bought tostada shells

  • 1/4 cup Cotija cheese

Instructions:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

  2. Use a fork or a potato masher to mash the avocados in the mixing bowl until you achieve your desired level of creaminess.

  3. Add salt, lime, and sour cream and mix well to combine.

  4. In a separate bowl, combine tomato, onion, garlic, jalapeño, cilantro, lime, salt, and pepper, and mix well to combine.

  5. Heat olive oil in a skillet over medium-high heat. Add ground pork to pan and use a spatula to break up the pork. Cook pork until browned for about 5 minutes then reduce the heat to low.

  6. Add the taco seasoning mix, water, and tomato paste to the pan. Simmer for 2-3 minutes then remove from heat and set aside.

  7. In a small bowl, combine sour cream, lime juice, and salt. Mix well to combine.

  8. To assemble your tostadas, spread a thin layer of the creamy avocado onto the tostada followed by about 2 tablespoons or the saucy pork and a light dusting of the Cotija cheese.

  9. Add about 1-2 tablespoons of the pico de gallo and top it off with a drizzle of the lime crema.

  10. Enjoy your creamy avocado and saucy pork tostadas immediately while still warm.
