Creamy Avocado and Saucy Pork Tostadas

Ingredients:
For the Creamy Avocado:
2 ripe avocados
1/2 teaspoon salt (adjust to taste)
Juice of 1/2 lime (about 1 tablespoon)
1 tablespoon sour cream or Greek yogurt
For the Pico de Gallo:
2 medium-sized tomatoes, diced
1/4 cup white or red onion, diced
1 jalapeño, diced
2 cloves garlic, minced
Juice from 1/2 lime
1/4-1/2 cup cilantro, chopped
Salt and Pepper to taste
For the Saucy Pork:
1 tablespoon olive oil
1 pound ground pork
Taco seasoning mix (I like Siete)
2 tablespoons tomato paste
For the Lime Crema:
2 tablespoons sour cream or Greek yogurt
1 teaspoon lime juice
Salt to taste
For Assembling the Toastadas:
8 homemade or store bought tostada shells
1/4 cup Cotija cheese
Instructions:
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
Use a fork or a potato masher to mash the avocados in the mixing bowl until you achieve your desired level of creaminess.
Add salt, lime, and sour cream and mix well to combine.
In a separate bowl, combine tomato, onion, garlic, jalapeño, cilantro, lime, salt, and pepper, and mix well to combine.
Heat olive oil in a skillet over medium-high heat. Add ground pork to pan and use a spatula to break up the pork. Cook pork until browned for about 5 minutes then reduce the heat to low.
Add the taco seasoning mix, water, and tomato paste to the pan. Simmer for 2-3 minutes then remove from heat and set aside.
In a small bowl, combine sour cream, lime juice, and salt. Mix well to combine.
To assemble your tostadas, spread a thin layer of the creamy avocado onto the tostada followed by about 2 tablespoons or the saucy pork and a light dusting of the Cotija cheese.
Add about 1-2 tablespoons of the pico de gallo and top it off with a drizzle of the lime crema.
Enjoy your creamy avocado and saucy pork tostadas immediately while still warm.
