Creamy Avocado and Saucy Pork Toastadas

Creamy Avocado and Saucy Pork Tostadas

Ingredients:

For the Creamy Avocado:

  • 2 ripe avocados

  • 1/2 teaspoon salt (adjust to taste)

  • Juice of 1/2 lime (about 1 tablespoon)

  • 1 tablespoon sour cream

For the Pico de Gallo:

  • 2 medium-sized tomatoes, diced

  • 1/4 cup white or red onion, diced

  • 1 jalapeño, diced

  • 2 cloves garlic, minced

  • Juice from 1/2 lime

  • 1 handful of cilantro

  • Salt and Pepper to taste

For the Saucy Pork:

For the Lime Crema:

  • 2 tablespoons sour cream

  • 1 teaspoon lime juice

  • Salt to taste

For Assembling the Toastadas:

  • 8 homemade or store bought tostada shells

  • 1/4 cup Cotija cheese

Instructions:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

  2. Use a fork or a potato masher to mash the avocados in the mixing bowl until you achieve your desired level of creaminess.

  3. Add salt, lime, and sour cream and mix well to combine.

  4. In a separate bowl, combine tomato, onion, garlic, jalapeño, cilantro, lime, salt, and pepper, and mix well to combine.

  5. Heat olive oil in a skillet over medium-high heat. Add ground pork to pan and season with homemade taco seasoning mix.

  6. Using a spatula, break up the pork. Add in tomato paste and mix well to combine. Cook pork until browned for about 5 minutes then remove from heat and set aside.

  7. In a small bowl, combine sour cream, lime juice, and salt. Mix well to combine.

  8. To assemble your tostadas, spread a thin layer of the creamy avocado onto the tostada followed by about 2 tablespoons or the saucy pork and a light dusting of the Cotija cheese.

  9. Add about 1-2 tablespoons of the pico de gallo and top it off with a drizzle of the lime crema.

  10. Enjoy your creamy avocado and saucy pork tostadas immediately while still warm.
