Crispy Shrimp Egg Rolls

Course: Appetizer

Ingredients:

  • 10 pieces of fresh or frozen shrimp

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • 5 egg roll wrapper, cut in half

  • Vegetable oil, for frying

  • Sweet and sour sauce, for dipping (optional)

  • Fresh parsley, for garnish

Instructions:

  1. Devein the shrimp and make small cuts along the curved part, about halfway through, enabling them to lay flat.

  2. Season the shrimp with chili powder, paprika, garlic powder, salt, and pepper.

  3. Slice the egg roll wrappers down the center to create two rectangles.

  4. On a clean surface, lay out an egg roll wrapper, starting from its shortest width, position a piece of shrimp.

  5. Roll the wrapper over the shrimp. Once the shrimp is fully enclosed, trim any excess wrapper and use water to dampen the edge for sealing.

  6. Repeat with remaining shrimp.

  7. Heat oil over medium-high heat. Once glistening, add wrapped shrimp and fry until golden brown, about 2-3 minutes per side.

  8. Remove egg rolls from oil and place on a wire rack.

  9. Arrange crispy shrimp egg rolls on a serving platter, garnish with fresh parsley and serve with a side of sweet and sour sauce for dipping.
