Easy Barbacoa Beef Recipe

Ingredients:
3 lbs beef chuck roast, cut into chunks
1 large onion, finely chopped
4 cloves garlic, minced
1 chipotle pepper in adobo sauce, minced
1 tablespoon ground cumin
1 tablespoon dried oregano
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Salt and pepper to taste
4 cups beef bone broth or regular beef broth
1/4 cup apple cider vinegar
1/4 cup fresh lime juice
3 bay leaves
Instructions:
Preheat oven to 350°F (176°C).
Season the beef chunks with salt and pepper.
In the Dutch oven, heat a bit of oil over medium-high heat. Brown the beef chunks on all sides. Work in batches if necessary to avoid overcrowding.
Add chopped onions to the Dutch oven and sauté until softened.
Stir in minced garlic and cook for an additional minute.
Add chipotle pepper, ground cumin, dried oregano, ground coriander, smoked paprika, ground cinnamon, and ground cloves. Stir well to coat the beef.
Pour in beef broth, apple cider vinegar, and fresh lime juice. Mix everything together.
Toss in bay leaves for added flavor.
Bring the mixture to a boil, then reduce the heat to low. Cover the Dutch oven with a lid and transfer to preheated oven for 2.5 to 3 hours or until the beef is fork-tender.
Once the beef is tender, use two forks to shred it in the Dutch oven.
Allow the shredded beef to soak up the flavorful juices for an additional 15-20 minutes.
