Easy Dan Dan Noodles

Ingredients:
For the Sauce:
3 tablespoons soy sauce
2 tablespoons Tahini
2 tablespoons Chinese black vinegar
1 tablespoon sugar
1 tablespoon chili oil (adjust to your spice preference)
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons vegetable or peanut oil
For the Ground Pork:
1/2 pound ground pork
1 tablespoon soy sauce
1 tablespoon Shaoxing wine (Chinese rice wine) or dry sherry
1 teaspoon cornstarch
Other Ingredients:
8 ounces Chinese egg noodles or any other thin noodles
Chopped green onions for garnish
Crushed peanuts for garnish
Instructions:
In a bowl, mix together soy sauce, Tahini, Chinese black vinegar, sugar, chili oil, minced garlic, and grated ginger.
Heat vegetable or peanut oil in a small saucepan until hot but not smoking. Pour the hot oil over the sauce mixture. Stir well to combine. Set aside.
In a bowl, combine ground pork with soy sauce, Shaoxing wine (or dry sherry), and cornstarch. Mix well.
In a pan over medium heat, cook the seasoned ground pork until browned and cooked through. Break it into small pieces as it cooks. Set aside.
Cook the Chinese egg noodles or any other thin noodles according to the package instructions. Drain and set aside.
Place a portion of cooked noodles in a serving bowl.
Spoon a generous amount of the prepared sauce over the noodles.
Top with the cooked ground pork.
Garnish the Dan Dan Noodles with chopped green onions and crushed peanuts.
Give everything a good mix before eating to ensure the flavors are well distributed.
