Leftover Brisket and Blue Cheese Quesadilla

Leftover Brisket Stroganoff

Ingredients:

The Quesadilla

  • 2 cups leftover brisket, diced

  • Caramelized onions

  • 8oz Blue Cheese

  • 8oz shredded Mexican cheese

  • 1 pack of flour tortillas

  • 2 tablespoons olive oil

  • Caramelized onions

The Caramelized Onions

  • 1 yellow onion, thinly sliced

  • 2 tablespoons butter

  • Drizzle of olive oil

  • Salt and pepper to taste

  • Pinch of sugar

  • 1 tablespoon balsamic vinegar

The Spicy Mayo

  • 1/2 cup mayo

  • 1/2 cup Sour Cream

  • 1-2 teaspoons lime juice

  • 2 teaspoons Adobo Seasoning

  • Hot Sauce to Taste (I use about 2 tablespoons of Cholula)

Instructions:

  1. Begin by caramelizing your onions by heating a pan over medium heat and add the butter and a drizzle of olive oil.

  2. Once the butter has melted, add the thinly sliced yellow onion to the pan.

  3. Cook the onions, stirring occasionally, for about 10-15 minutes, or until they become soft and translucent.

  4. Sprinkle the caramelizing onions with salt, pepper, and a pinch of sugar. Stir to combine.

  5. Continue cooking the onions for another 3 minutes, allowing them to caramelize further.

  6. Add the balsamic vinegar to the pan, stirring to coat the onions evenly.

  7. Let the onions simmer in the balsamic vinegar for about 5 minutes, allowing the flavors to meld together and the liquid to reduce slightly.

  8. Once the onions are caramelized to your liking and the balsamic vinegar has reduced, remove the pan from heat.

  9. Next, diced your leftover brisket.

  10. To assemble your quesadillas, start by placing a flour tortilla onto a clean workspace.

  11. Sprinkle a handful of shredded cheese onto the tortilla then layer on each ingredient starting with the brisket, followed by the blue cheese, caramelized onion, and finally more shredded cheese. Top with another flour tortilla.

  12. Heat your oil in a frying pan on medium heat and place your quesadilla in the pan.

  13. Sear on both sides until the tortilla is golden brown, about 4 minutes per side, remove from heat and place on a cutting board.

  14. Meanwhile, prepare your spicy mayo by adding all ingredients into a small bowl and mixing well to combine.

  15. Cut your quesadillas into quarters and serve with your spicy mayo on the side.
