Quick and Easy Air-Fried Salmon Poke Bowls

These Hawaiian-inspired bowls typically feature marinated fish, vegetables, and a variety of toppings, all served over a bed of rice or greens. Quick and Easy Air-Fried Salmon Poke Bowls

Ingredients

  • 2 fresh salmon fillets, cut into bite-sized cubes

  • 2 tablespoons Trader Joe’s Salmon Rub

  • 2 cups cooked long-grain rice

  • 1/4 cup rice vinegar

  • Pinch of granulated sugar

  • 1 cup mango, diced

  • 1 cup edamame beans, steamed

  • 1 avocado, sliced

  • 1 carrot, peeled and grated

  • 1 cup mayonnaise

  • 1/4 cup sriracha or to taste

  • Salt and pepper to taste

  • Optional toppings: Trader Joe’s Furikake Seasoning, sesame seeds

Instructions

  1. Cook your rice according to package. Once done, remove from heat and stir in rice vinegar and sugar. Set aside to cool.

  2. Coat the salmon cubes all over in the Trader Joes Salmon Rub.

  3. Preheat your air fryer to 380°F. Cook the salmon in the air fryer for 6-8 minutes, or until the fish is cooked through and has a golden, crispy exterior.

  4. While the salmon is cooking, prepare the other components of your poke bowl.

  5. In a small bowl, combine mayonnaise and sriracha and mix well.

  6. Assemble your bowl by arranging a bed of sushi rice in a bowl or plate, top it with the air fried salmon cubes, mango, steamed edamame beans, sliced avocado, carrots and a drizzle of spicy mayo.

  7. To elevate the flavors further, you can sprinkle additional sesame seeds and Trader Joe’s Furikake Seasoning on top of your poke bowl. These toppings add contrasting textures and a burst of umami goodness.

  8. Serve and enjoy!
