Saucy Sesame Soy Pork Bowls

Course: Lunch, Dinner

Ingredients:

  • 1 pound ground pork

  • 2 tablespoons sesame oil

  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 1 tablespoon brown sugar

  • 1 tablespoon rice vinegar

  • 2 tablespoons olive oil (for cooking)

  • 2 cups cooked white or brown rice

  • 1 carrot, thinly sliced into matchsticks

  • 2 green onions, sliced, greens separated from whites

  • Sriracha mayo (for garnish, optional)

  • 1 tablespoon sesame seeds (for garnish, optional)

  • Crispy fried onions (for garnish, optional)

  • Lime wedges (for garnish, optional)

Instructions:

  1. Heat a drizzle of oil in a large pan over medium-high heat.

  2. Add pork and a big pinch of salt. Cook, breaking up meat into pieces, until browned, 3-4 minutes.

  3. Stir in garlic and ginger and cook for 30 seconds until fragrant.

  4. Stir in carrots, sesame oil, soy sauce, brown sugar, and rice vinegar.

  5. Cook until carrots are softened, pork is cooked through, and sauce has thickened, 2-4 minutes more. Taste and season with salt and pepper. Turn off heat.

  6. Divide cooked rice between bowls; top with pork mixture and any remaining sauce from pan.

  7. If using, drizzle with Sriracha mayo. Sprinkle with crispy fried onions, scallion greens, and sesame seeds. Serve with lime wedges on the side.
