Ingredients
  

For the Overnight Oats

  • 1/2 cup rolled oats
  • 3/4 cup unsweetened oat milk or any plant-based milk
  • 1 scoop vanilla plant-based protein powder
  • 1/2 ripe banana mashed
  • 1 tablespoon chia seeds for thickness
  • 1 tablespoon maple syrup or agave nectar optional, depending on sweetness preference
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Toppings (optional)

  • 1 ripe banana sliced
  • 1/4 cup Unsweetened shredded coconut
  • 1/4 cup Coconut cream
  • 1 teaspoon Cinnamon

Instructions
 

  • In a jar or bowl, mash the banana, then mix in the oats, oat milk, protein powder, chia seeds, maple syrup (if using), vanilla extract, and salt. Stir well until smooth.
  • Cover and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and thicken.
  • In the morning, stir again and add a splash of plant-based milk if needed for consistency or extra maple syrup for sweetness.
  • Top with banana slices, shredded coconut, coconut cream whipped cream, or cinnamon for that true banana cream pie feel.
  • Enjoy chilled!
