These Banana Cream Pie Protein Overnight Oats are a creamy, high-protein, dairy-free breakfast that tastes like dessert! Packed with plant-based protein, chia seeds, and banana, it's perfect for meal prep or busy mornings.
1tablespoonmaple syrup or agave nectaroptional, depending on sweetness preference
1/2teaspoonvanilla extract
Pinchof salt
For the Toppings (optional)
1ripe bananasliced
1/4 cupUnsweetened shredded coconut
1/4cupCoconut cream
1teaspoonCinnamon
Instructions
In a jar or bowl, mash the banana, then mix in the oats, oat milk, protein powder, chia seeds, maple syrup (if using), vanilla extract, and salt. Stir well until smooth.
Cover and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and thicken.
In the morning, stir again and add a splash of plant-based milk if needed for consistency or extra maple syrup for sweetness.
Top with banana slices, shredded coconut, coconut cream whipped cream, or cinnamon for that true banana cream pie feel.
Enjoy chilled!
