Air-Fried Bang Bang Shrimp

Ingredients:
1 lb medium-sized raw shrimp, deveined, tails off
1/4 cup cornstarch
1 large egg white
1-1/2 cups panko bread crumbs
spray oil or olive oil
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 teaspoon rice vinegar
2 tablespoons Sriracha (adjust to taste)
Sliced green onion for garnish (optional)
Sesame seeds for garnish (optional)
Coconut rice, optional to make it a meal
Instructions:
Begin by setting up three separate bowls for coating the shrimp: one with cornstarch, one with egg white, and one with panko breadcrumbs.
Take each shrimp and first coat it with cornstarch, ensuring it's evenly coated. Place the coated shrimp on a parchment or paper plate.
Dip the cornstarch-coated shrimp into the egg white, allowing any excess to drip off, and then transfer it to the bowl with panko breadcrumbs. Press the shrimp into the crumbs to coat both sides evenly.
Place the coated shrimp in a single layer in the air fryer basket.
Lightly spray or coat the top of the shrimp with oil to help it crisp up.
Air fry the shrimp for 5 minutes at 350 degrees then carefully flip the shrimp over, spray the other side with oil, and air fry for an additional 2 minutes, or until they achieve a golden brown color.
Depending on the size of your air fryer, you may need to do this in two batches, ensuring that the shrimp don't touch each other in the air frying basket.
While the shrimp are cooking, prepare the bang bang sauce. In a bowl large enough to accommodate all the cooked shrimp, whisk together mayonnaise, chili sauce, rice vinegar, and Sriracha.
Once the shrimp are done cooking, gently toss them in the prepared bang bang sauce until they are evenly coated.
Serve the shrimp immediately over a bed of rice (optional) and if you prefer, garnish with chopped green onions and sesame seeds.
