Spicy Peanut Butter Noodles with Chicken

Ingredients:
For the Peanut Sauce:
1/2 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons honey or maple syrup
1-2 tablespoons Sriracha sauce (adjust to your preferred spice level)
2 cloves garlic, minced
1-inch piece of fresh ginger, grated
1/2 cup coconut milk
Juice of 1 lime
Salt, to taste
For the Chicken:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
Salt and black pepper, to taste
For the Noodles:
8 ounces rice noodles of your choice
1 cup shredded carrots
Chopped fresh cilantro and crushed peanuts for garnish (optional)
Instructions:
In a bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey or maple syrup, Sriracha sauce, minced garlic, grated ginger, coconut milk, lime juice, and a pinch of salt.
Taste the sauce and adjust the spiciness, sweetness, or saltiness to your liking. Add more Sriracha, honey, or salt if needed.
Season the chicken pieces with salt and black pepper.
In a skillet or pan, heat the oil over medium-high heat.
Add the chicken pieces and cook until they are browned and cooked through, about 4-6 minutes per side, depending on the thickness of the chicken.
Add shredded carrots to the pan with the chicken and saute until just softened, about 2 minutes.
Reduce heat to low then pour the peanut sauce in the pan to warm through.
Cook the noodles according to the package instructions until al dente.
Drain the cooked noodles and rinse them under cold water to stop the cooking process. This helps to keep them from sticking together.
Add the drained noodles to the pan with the sauce and the chicken and mix well to coat the noodles with the sauce.
Divide the spicy peanut butter noodles with chicken among serving plates or bowls.
If desired, garnish with chopped fresh cilantro and crushed peanuts for added texture and flavor.
