Bang Bang Chicken Skewers

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1/2 cup mayonnaise

  • 2 tablespoons sweet chili sauce

  • 1 tablespoon Sriracha sauce (adjust to taste)

  • 1 tablespoon honey

  • 1 tablespoon soy sauce

  • 1 teaspoon minced garlic

  • 1 teaspoon minced ginger

  • 1 tablespoon lime juice

  • Salt and pepper to taste

  • Wooden skewers, soaked in water for 30 minutes

For Garnish:

  • Thinly sliced green onions

  • Sesame seeds

Instructions

  1. In a bowl, combine the minced garlic, minced ginger, lime juice, soy sauce, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes, allowing the flavors to penetrate.

  2. Preheat your grill to medium-high heat. If using an indoor grill pan or the oven, preheat to 400°F (200°C).

  3. Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a little space between each piece. This makes it easier for even cooking.

  4. Place the chicken skewers on the preheated grill. Cook for about 3-4 minutes on each side or until the chicken is fully cooked and has a nice char. The internal temperature should reach 165°F (74°C).

  5. In a bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha sauce, honey, and a pinch of salt. Taste and adjust the Sriracha sauce for spiciness, if desired.

  6. Once the chicken skewers are cooked, remove them from the grill. Brush or drizzle the bang bang sauce over the skewers, making sure they are well-coated. You can reserve some sauce for dipping later.

  7. Transfer the chicken skewers to a serving plate. Garnish with chopped sliced green onions, and sesame seeds. Serve with any extra bang bang sauce on the side for dipping.
