Old Bay Shrimp Burritos
Burritos are a beloved comfort food, offering a delectable blend of flavors and textures wrapped up in a convenient package. Old Bay Shrimp Burritos
Ingredients
For the Old Bay Shrimp:
1 pound large shrimp, peeled and deveined
2 tablespoons Old Bay seasoning
1 tablespoon olive oil
For the Burritos:
4 large flour tortillas
2 cups cooked white rice
1 cup canned black beans, drained and rinsed
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika (optional, for a smoky flavor)
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (adjust to taste, for heat)
Salt and black pepper to taste
1/2 cup guacamole
1 cup shredded Chihuahua cheese (or Monterey Jack)
1/4 cup chopped fresh chives
For the Spicy Mayo:
1/2 cup mayonnaise
1 tablespoon hot sauce (adjust to taste)
1 teaspoon lime juice
Salt and pepper to taste
Instructions
Heat olive oil in a skillet over medium-high heat then add in rinsed beans along with the garlic, ground cumin, chili powder, paprika, oregano, cayenne pepper, salt and black pepper to taste. Mix well to combine and let simmer for 15-20 minutes until the juices have nearly evaporated then remove from heat.
In a bowl, toss the peeled and deveined shrimp with Old Bay seasoning until they are well coated.
In another skillet, heat olive oil over medium-high heat.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.
In a small bowl, combine mayonnaise, hot sauce, lime juice, salt, and pepper.
Mix well to create a smooth and spicy mayo sauce. Adjust the hot sauce according to your preferred level of spiciness. Set aside.
Warm the flour tortillas either in a microwave or on a skillet until they are pliable.
Lay out the tortillas and place a portion of cooked white rice in the center of each tortilla.
Top the rice with a portion of black beans.
Divide the cooked Old Bay shrimp among the tortillas, placing them on top of the beans.
Sprinkle shredded Chihuahua cheese over the shrimp.
Place a dollop of guacamole on top of the cheese then drizzle some of the prepared spicy mayo over the guacamole.
Sprinkle chopped chives on top.
Fold the sides of the tortilla over the filling.
Start rolling from the bottom, tucking the sides in as you go, to create a burrito shape and continue rolling until the burrito is fully wrapped.
Place the assembled burritos seam side down on a skillet, pressing slightly, after a couple minutes or once the tortilla is a golden brown, flip and repeat on the other side then remove from heat. This will help them stay together and get melt the cheese.
Cut the burritos in half diagonally for easier eating, if desired.
Serve the Old Bay Shrimp Burritos with extra spicy mayo on the side for dipping.
