Blackened Chicken Cobb Salad with Honey Mustard Dressing

Ingredients:

For the Blackened Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons paprika

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon ground black pepper

  • 1 teaspoon cayenne pepper (adjust to taste)

  • Salt to taste

  • 2 tablespoons olive oil

For the Salad:

  • 6 cups mixed salad greens (lettuce, spinach, arugula, etc.)

  • 4 hard-boiled eggs, sliced

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 4 slices cooked bacon, crumbled

  • 1/2 cup crumbled blue cheese

For the Honey Mustard Dressing:

  • 1/4 cup honey

  • 2 tablespoons Dijon mustard

  • 2 tablespoons whole grain mustard

  • 2 tablespoons apple cider vinegar

  • 1/4 cup olive oil

  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, dried oregano, black pepper, cayenne pepper, and salt to create the blackening seasoning.

  2. Pat the chicken breasts dry with paper towels and rub the blackening seasoning evenly on both sides of each chicken breast.

  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for 5-6 minutes per side, or until cooked through and blackened. Remove from heat and let rest for a few minutes before slicing.

  4. In a large salad bowl, arrange the mixed greens as the base.

  5. Arrange the sliced hard-boiled eggs, halved cherry tomatoes, diced avocado, crumbled bacon, and crumbled blue cheese on top of the greens.

  6. Slice the cooked blackened chicken breasts and place them on top of the salad.

  7. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, and apple cider vinegar until well combined.

  8. Slowly drizzle in the olive oil while whisking continuously until the dressing emulsifies.

  9. Season with salt and pepper to taste.

  10. Drizzle the prepared honey mustard dressing over the blackened chicken cobb salad.

  11. Toss gently to coat everything evenly with the dressing and serve immediately.
