Blue Cheese and Steak Quesadilla with Spicy Mayo
If you're looking for a delicious and easy-to-make dish that combines the rich, bold flavors of steak and blue cheese with the sweetness of caramelized onions and the zing of chipotle mayo, look no further than a blue cheese and steak quesadilla. This delicious recipe was inspired by a Mexican restaurant in my hometown, and now that I live halfway across the country, I needed to recreate it to get my fix.
I've put my own spin on their classic dish, air frying my steak, rather than pan searing it and incorporating my own spicy mayo recipe, to create a meal that's both satisfying and flavorful. This mouth-watering dish is perfect for a quick lunch or dinner and can be customized to suit your tastes by adjusting the amount of blue cheese or spice in the mayo.

Blue Cheese and Steak Quesadilla with Spicy Mayo
Ingredients
The Quesadilla
2 8oz Filet Mignon
1 medium-sized white onion, sliced thin
2 cloves garlic, minced
8oz Blue Cheese
8oz shredded Mexican cheese (I get Chihuahua)
1 pack of flour tortillas
Salt and pepper to taste
2 tablespoons of butter
Caramelized onions (see notes if you're in need of a recipe)
The Spicy Mayo
1/2 cup mayo
1/2 cup Sour Cream
1-2 teaspoons lime juice
2 teaspoons Adobo Seasoning
Hot Sauce to Taste (I use about 2 tablespoons of Cholula)
Instructions
Begin by caramelizing your onions (see notes below if you're in need of instructions).
Next, prepare your steak. Sprinkle with salt and pepper to taste, then drizzle a tablespoon of olive oil into the filets. Coat the top and bottom of the filets with minced garlic then set aside.
Heat your air fryer to 390 then place your filets into the fryer for a total of 14 minutes (medium-rare), flipping half way through. Increase the time if you prefer your steak more cooked. Once the steak is cooked to your liking, set aside to rest.
To assemble your quesadillas, start by placing a flour tortilla onto a clean workspace. Sprinkle a handful of shredded cheese onto the tortilla then start by layering each ingredient starting with the steak, then the blue cheese, caramelized onion, and finally more shredded cheese. Top with another flour tortilla.
Heat your butter in a frying pan on medium heat and place your quesadilla in the pan once the butter is melted. Sear on both sides until the tortilla is golden brown, about 4 minutes per side, remove from heat and place on a cutting board.
Meanwhile, prepare your spicy mayo by adding all ingredients into a small bowl and mixing well to combine.
Cut your quesadillas into quarters and serve with your spicy mayo on the side.
Notes:
To caramelize your onions, you'll need to start by thinly slicing a white onion and adding them to a pan on medium-heat with 2 tablespoons of butter and a drizzle of olive oil. Let them simmer, stirring occasionally for about 10-15 minutes. Next add a sprinkle of salt and pepper along with a pinch of sugar. Let that simmer for another 3 minutes. You'll then add about 2 tablespoons of Balsamic Vinegar, stirring to combine. Simmer for another 5 minutes then remove pan from heat.
