Easy Beef Bulgogi Bowls

Ingredients:
For the Beef Bulgogi:
1 pound ground beef (lean or extra-lean)
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup soy sauce
2 tablespoons brown sugar
2 tablespoons mirin (or rice wine vinegar)
1 tablespoon sesame oil
1 teaspoon grated fresh ginger (optional)
1/2 teaspoon crushed red pepper flakes (adjust to your spice preference)
Salt and black pepper, to taste
For the Bowl:
Cooked white or brown rice (enough for 4 servings)
Sliced green onions, for garnish (optional)
Sesame seeds, for garnish (optional)
Sliced cucumbers or other fresh veggies, for garnish (optional)
Fried egg, for garnish (optional)
Instructions:
In a bowl, whisk together the soy sauce, brown sugar, mirin (or rice wine vinegar), sesame oil, grated fresh ginger (if using), crushed red pepper flakes, and a pinch of black pepper. Set this sauce aside.
Heat a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it into crumbles with a spatula as it cooks.
When the beef is mostly browned, add the chopped onion and minced garlic. Continue to cook until the beef is fully browned, the onion is translucent, and the garlic is fragrant.
Pour the sauce mixture over the cooked beef and onions. Stir well to combine.
Allow the mixture to simmer for about 5-7 minutes, or until the sauce thickens slightly and coats the beef evenly. Taste and adjust the seasoning if needed.
To serve, spoon the cooked rice into individual serving bowls.
Top each bowl with a generous portion of the beef bulgogi mixture.
Garnish with sliced green onions, sesame seeds, and fresh cucumber slices, and a fried egg if desired.
