Shrimp Quesadillas with Refried Beans
Course: Lunch, Dinner
Ingredients:
1 pound large shrimp, peeled and deveined
1 medium onion, thinly sliced
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 cup refried beans (homemade or canned)
4 large flour tortillas
2 cups shredded cheese (I use Chihuahua® Brand Quesadilla Cheese)
2 tablespoons fresh crema (for garnish)
2 tablespoons fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions:
Heat the olive oil in a skillet over medium-high heat.
Add the thinly sliced onions and sauté for 3-4 minutes until they start to soften and caramelize.
Add the minced garlic and cook for an additional 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side or until they turn pink and opaque. Season with salt and pepper to taste. Remove the cooked shrimp from the skillet and set them aside.
In the same skillet, wipe it clean if necessary, and place one tortilla.
Spread a layer of refried beans evenly on one half of the tortilla.
Sprinkle a portion of shredded cheese over the beans.
Arrange some of the cooked shrimp and caramelized onions over the cheese.
Fold the other half of the tortilla over the filling, creating a half-moon shape.
Cook the quesadilla over medium heat for about 2-3 minutes on each side or until it's golden brown and the cheese is fully melted.
Repeat the process for the remaining tortillas and filling.
Slice the shrimp quesadillas into wedges and garnish with chopped fresh cilantro.
Serve with lime wedges on the side for squeezing over the quesadillas.
