Easy Queso Fundido

Easy Queso Fundido

Course: Appetizer

Ingredients:

  • 2 cups Chihuahua Brand Quesadilla Cheese from V&V Supremo

  • 2 tablespoons

  • 1/2 small onion, finely diced

  • 1 poblano pepper, seeded and finely diced

  • 2 cloves garlic, minced

  • 1/3 cup diced tomatoes (fresh or canned)

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • Salt and pepper, to taste

  • Spoonful of fresh pico de gallo (optional, for topping)

  • Tortillas or tortilla chips, for serving

Instructions:

  1. In a large skillet, heat olive oil over medium heat.

  2. Add the diced onion and poblano pepper to the skillet. Sauté until the onion is translucent and the poblano is softened.

  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  4. Stir in the diced tomatoes, chopped cilantro, ground cumin, chili powder, salt, and pepper. Mix until all the ingredients are evenly distributed then remove from heat.

  5. Heat an oven-safe skillet over low heat and add half of the shredded melting cheese to the skillet. Stir continuously until the cheese is completely melted then add veggie mixture to the skillet and and mix well to combine.

  6. Top the mixture with the other half of cheese then place under the broiler for 2-4 minutes until the top is slightly golden and bubbly.

  7. Remove from oven and top with a spoonful of fresh pico de gallo if using then serve the Queso Fundido immediately with tortillas or tortilla chips.
