Skillet Apple Pie
Ingredients
4 lbs. Granny Smith medium-sized apples, peeled, cored, and thinly sliced
1 teaspoon cinnamon
3/4 cup granulated sugar
1/2 cup butter
1/2 cup packed brown sugar
1 package refrigerated pie crusts (pillsbury)
1 egg white
2 tablespoons sugar (for sprinkling on crust)
Instructions
Preheat your oven to 350°F.
In your oven-safe skillet (cast iron works best), melt the butter over medium heat, then add the brown sugar and cook, stirring occasionally until dissolved, about 1-2 minutes. Remove from heat.
In a large bowl, combine the peeled and sliced apples, granulated sugar, and cinnamon. Toss the mixture until all the apples are evenly coated.
Place 1 pie crust in the skillet over brown sugar mixture then spoon all of the apples over the crust, being sure to drain any excess liquid.
Place remaining pie crust over the apple pie mixture and tuck in the sides of the crust around the skillet.
Whisk egg whites until foamy then brush over pie crust and sprinkle all over with sugar.
Bake for 1 hour to 1 hour and 10 minutes until golden and bubbly.
Once baked, remove the skillet from the oven and let it cool for at least 15 minutes before slicing. Serve, either on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
