Oven-Baked Cheesesteak Taquitos

Oven-Baked Cheesesteak Taquitos
Ingredients
1lb. Shaved Rib Eye Steak (from a high-quality local butcher shop)
1 block Gruyere cheese, grated
1 tablespoon olive oil
Salt and pepper to taste
8 flour tortillas
Olive oil spray
2 tablespoons mayonnaise
2 tablespoons ketchup
Instructions
Pre-heat oven to 375 degrees Fahrenheit.
Heat 1 tablespoon of olive oil over medium-high heat.
Add the shaved rib eye steak to the skillet and season with salt and pepper to taste.
Cook the steak for about 2-3 minutes per side or until it's cooked to your desired level of doneness. Avoid overcrowding the skillet to ensure the steak cooks evenly.
Turn off heat and add the Gruyere to the pan with the steak, mixing well to combine.
Lay out the flour tortillas on a clean work surface. Divide the cooked cheesesteak evenly among the tortillas.
Tightly roll up each tortilla, starting from the filled side and rolling towards the other end.
Place on a parchment-lined baking sheet, then spray with olive oil then bake for 10-12 minutes until golden brown and crispy.
Meanwhile, make your fry sauce by combining ketchup and mayonnaise in a small bowl and mix well to combine.
Remove taquitos from the oven and serve warm along side fry sauce.
