Pork Stuffed Crispy Enchiladas Verdes

Instructions

  1. Heat the oven to 425 degrees Fahrenheit.

  2. Cook the pork: Heat 2 tbsps olive oil in a large skillet over medium heat. Add ground pork and Taco Seasonings Mix to pan, breaking up pork and stirring to combine until pork is cooked through, about 8 minutes.

  3. Add in 1/4 cup of your green chile enchiladas sauce to the pork mixture and stir to combine then remove from heat and set aside.

  4. Assemble the enchiladas: on a clean work station, add 1/4 cup of the pork mixture onto a flour tortilla then sprinkle with 2 tbsp of Mexican cheese, roll and place into your skillet, repeating until all of your pork mixture has been placed into tortillas (see images below).

  5. Drizzle one tbsp olive oil on top of the enchiladas (this helps them crisp up in the oven).

  6. Bake your enchiladas for 10 minutes then remove from oven and top with remaining enchiladas sauce and cheese.

  7. Place back into the oven for another 8 minutes until sauce is warmed through and cheese is melted on top.

  8. Remove from oven and top with guacamole, sour cream, and serve! It's as simple as that.
