Refreshing Watermelon Bruschetta with Whipped Feta
Ingredients
For the Watermelon Bruschetta:
1 cup diced watermelon
1 cup diced cucumber
1 cup diced tomato
1 tablespoon agave syrup
For the Whipped Feta:
1 cup crumbled feta cheese
1/2 cup cream cheese, softened
For the Bruschetta Base:
French bread, sliced and grilled
Instructions
In a medium-sized bowl, combine the diced watermelon, cucumber, and tomato.
Drizzle the agave syrup over the mixture and gently toss until everything is well coated. Set aside to marinate for about 10-15 minutes, allowing the flavors to meld together.
In the bowl of a food processor, add the crumbled feta cheese and softened cream cheese.
