Seafood Pasta Salad with Crab Meat, Shrimp, Tomato, Roasted Corn, and Hard-Boiled Eggs

Seafood Pasta Salad

Ingredients

  • 1 lb pasta shells

  • 1 lb lump crab meat

  • 1/2 lb cooked shrimp

  • 1/2 cup charred corn

  • 1/2 cup cherry red tomatoes

  • 6 hard-boiled eggs

  • 1 1/2 cups mayonnaise

  • 1 tablespoon sweet relish

  • 1 teaspoon Dijon mustard

  • 1 tablespoon lemon juice

  • 1 teaspoon hot sauce

  • 1 tablespoon Old Bay seasoning

  • 1/4 cup red onions, finely diced

  • 1 teaspoon fresh dill, minced

  • Salt and pepper to taste

Instructions

  1. Cook your pasta until al dente then let it cool completely.

  2. Dice your hard-boiled eggs.

  3. In a mixing bowl, combine mayonnaise, sweet relish, mustard, hot sauce, lemon juice, Old Bay, red onion, dill, salt and pepper. Mix well to combine.

  4. In another bowl, combine pasta, crab meat, shrimp, eggs, corn, and tomato. Pour the mayonnaise mixture overtop and mix well to combine.

  5. Serve immediately or keep cold and enjoy within a few days.
