Saucy Pork Tacos with Peach Pico de Gallo

Ingredients

For the Saucy Pork:

For the Peach Pico de Gallo:

  • 1 ripe peach, diced

  • 1 ripe red tomato, diced

  • 1/4 cup red onion, finely chopped

  • 1 jalapeño, seeds removed and finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper, to taste

For Assembling the Tacos:

  • Soft tortillas (corn or flour)

  • Authentic Mexican Cheese (I use Chihuahua)

  • Fresh cilantro leaves, for garnish

  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add ground pork to pan and season with homemade taco seasoning mix.

  2. Using a spatula, break up the pork. Add in tomato paste and mix well to combine. Cook pork until browned for about 5 minutes then remove from heat and set aside.

  3. In a bowl, combine diced peaches, diced tomatoes, finely chopped red onion, jalapeno, garlic, and chopped cilantro. Squeeze lime juice over the mixture and gently toss. Season with salt and pepper to taste. Refrigerate until ready to use.

  4. Warm the tortillas according to package instructions.

  5. Sprinkle Mexican cheese onto the tortilla then spoon a generous portion of the saucy pork onto each tortilla. Top with a spoonful of the peach pico de gallo and garnish with fresh cilantro leaves.

  6. Serve with lime wedges on the side for an extra zing.
