Sausage and Veggie Bowl topped with Cilantro Lime Dressing
Ingredients:
For the Sausage & Veggie Bowl:
4 sausages, sliced into circles
1 15oz. can corn kernels, drained and charred
1 15oz. can black beans
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 green pepper, diced
1 cup rice 1 1/2 cups coconut milk
For the Cilantro Lime Dressing:
2 small garlic cloves
2 tablespoons freshly squeezed lime juice, from one lime
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup Mayonnaise
1/2 cup freshly grated Parmesan cheese
1 handful cilantro, about 1/2 cup
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions:
In a blender or food processor, add the fresh cilantro leaves, lime juice, garlic, Dijon mustard, Worcestershire sauce, mayonnaise, Parmesan cheese, salt, and pepper.
Blend the ingredients on medium speed until smooth and well combined. If needed, scrape down the sides of the blender or food processor to ensure everything is evenly mixed.
Taste the dressing and adjust the flavors as desired. Add more lime juice for tanginess, or salt and pepper for seasoning.
Cook the sausages in a skillet over medium heat until browned and cooked through, about 2-4 minutes. Remove from the skillet and set aside.
Char the corn kernels by placing them in a hot skillet, stirring occasionally until charred to your liking. Set aside.
In another skillet, heat the black beans until warmed through. Season with garlic powder, onion powder, salt, and pepper. Set aside.
Dice the green pepper and set aside.
Prepare the coconut rice by combining rice and coconut milk then cooking according to package instructions.
To assemble, divide the cooked coconut rice among serving bowls.
Top the rice with the cooked sausages, charred corn, seasoned black beans, and diced green pepper.
Drizzle the prepared cilantro lime dressing over each bowl, ensuring it coats the sausage and veggies evenly.
Serve the sausage and veggie bowls immediately, garnished with extra chopped cilantro if desired.
