Smash Burger Quesdadillas
Ingredients:
For the Fry Sauce:
1/4 cup mayonnaise
1-2 tablespoons Red Gold Ketchup benefiting Folds of Honor
1 1/2 teaspoons dill pickle juice
1/2 teaspoon yellow mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Kosher salt, to taste
Freshly ground black pepper, to taste
For the Quesadillas:
1 pound ground beef
Garlic powder, to taste
Onion powder, to taste
Kosher salt, to taste
Freshly ground black pepper, to taste
8 ounces shredded cheddar cheese
8 flour tortillas
2 tablespoons olive oil
Diced tomatoes, for topping
Diced onion, for topping
Chopped lettuce, for topping
Chopped dill pickles, for topping
Instructions:
In a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, garlic powder, onion powder, salt, and pepper. Mix well until smooth. Adjust seasoning according to taste. Set aside.
Take a handful of the beef mixture (about 1/4 cup) and evenly spread it over the tortillas, ensuring it reaches the edges.
Preheat a griddle or skillet to 350°F.
Drizzle olive oil onto the pan then sear the quesadillas with the meat side down for about 5 minutes.
Flip them over, top with a sprinkle of cheddar cheese and another tortilla.
Sear for an additional 4 minutes.
Flip again and sear for about 1 minute to ensure the cheese is melted and the tortilla is browned, then remove from heat.
Repeat this process for all the quesadillas.
Serve your quesadillas with tomatoes, onions, lettuce, pickles, and fry sauce on the side for dipping.
