Sour Cream & Onion Orzo

Course: Side Dish

Ingredients:

  • 1 cup orzo pasta

  • 2 tablespoons unsalted butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 1/2 cup chicken or vegetable broth

  • 1 cup sour cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup chopped fresh chives

  • Salt and black pepper to taste

Instructions:

  1. In a large skillet or pan, melt the butter over medium heat.

  2. Add the finely chopped onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.

  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

  4. Add the orzo pasta to the pan along with the chicken or vegetable broth and cook according to the package instructions or until al dente.

  5. Once the orzo is cooked, stir in the sour cream and grated Parmesan cheese.

  6. Continue to cook over low heat, stirring, until the sauce is smooth and well incorporated.

    Season the sour cream and onion orzo with salt and black pepper to taste.

  7. Stir in the chopped fresh chives for a burst of onion flavor and vibrant color.

  8. Transfer the sour cream and onion orzo to a serving dish and enjoy!
