Tater Tot Breakfast Casserole

Ingredients:
1 pound breakfast sausage
1 onion, finely chopped
1 red bell pepper, diced
1 green bell pepper, diced
2 cups shredded cheddar cheese
10 large eggs
1 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and black pepper, to taste
1 package (32 ounces) frozen tater tots
Instructions:
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it into crumbles with a spoon as it cooks. Remove excess grease if necessary.
Add chopped onions and diced bell peppers to the skillet with the sausage. Cook until the vegetables are softened. Remove from heat.
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, dried thyme, salt, and black pepper.
Arrange the tater tots on the bottom of a greased casserole dish.
Spread the cooked sausage and vegetable mixture evenly over top.
Sprinkle half of the shredded cheddar cheese over the sausage and vegetables.
Pour the egg mixture over the sausage and cheese.
Bake in the preheated oven for 45-50 minutes or until the eggs are set, and the tater tots are golden brown.
About 10 minutes before the casserole is done, sprinkle the remaining shredded cheddar cheese over the tater tots. Continue baking until the cheese is melted and bubbly.
Remove the casserole from the oven and let it cool for a few minutes.
Slice and serve the tater tot breakfast casserole warm. Enjoy!
