The Chicken

  • 1 lb boneless, skinless chicken breast

  • 1/2 cup panko breadcrumbs

  • 1/2 cup grated parmesan cheese

  • 1 egg, whisked

  • 1 teaspoon salt

  • 1/2 teaspoon ground pepper

  • 1/2 cup olive oil

  • Sesame seeds (optional, garnish)

  • Chives (optional, garnish)

The Sauce

  • 1/2 cup Mayonaisse

  • 2 tablespoons sweet Thai chili sauce

  • 1 tablespoon Sriracha sauce

  • 1 teaspoon rice vinegar

Instructions

  1. Start by cleaning up your chicken breast and patting dry.

  2. Next, cut the chicken into strips and season with salt and pepper.

  3. Combine panko breadcrumbs, parmesan cheese, salt, and pepper in a shallow dish.

  4. In another shallow dish, whisk egg.

  5. Dip each chicken strip into the beaten eggs, then coat it in panko mixture, pressing to adhere.

  6. Heat up the oil in a large skillet over medium-high heat, and cook the chicken until it's crispy and golden brown on both sides (about 5 minutes on each side).

  7. Next, mix together all of the ingredients for the sauce in a small bowl.

  8. Dredge each piece of chicken in the sauce until chicken is completely covered.

  9. Serve on a plate and sprinkle with sesame seeds and chives (optional).
