Almond-Crusted Salmon

Ingredients:
4 salmon fillets (about 6 oz each), skin-on
1 cup almonds, finely chopped or ground
2 tablespoons fresh parsley, finely chopped
1 teaspoon lemon zest
1/2 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons Dijon mustard
2 tablespoons honey
Lemon wedges for serving
Instructions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a shallow dish, combine the finely chopped or ground almonds, chopped parsley, lemon zest, garlic powder, salt, and pepper. Mix well to evenly distribute the flavors.
Pat the salmon fillets dry with paper towels and season with salt and pepper.
In a separate bowl, mix together Dijon mustard and honey.
Brush the top side of each salmon fillet with the honey mustard ensuring an even coating. Reserve remaining honey mustard for finishing the salmon.
Press the mustard-coated side of each fillet into the almond mixture, pressing gently to adhere the almond crust.
Place the coated salmon fillets on the prepared baking sheet, almond-crusted side up.
Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and the almond crust is golden brown and crispy.
Carefully transfer the almond-crusted salmon fillets to plates.
Garnish with additional honey mustard and serve with lemon wedges on the side.
