Easy Dill Pesto

Ingredients:

  • 2 cups fresh dill leaves, packed

  • 1/2 cup fresh parsley leaves, packed

  • 1/3 cup walnuts or pine nuts

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup extra-virgin olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Instructions:

  1. Wash the dill and parsley leaves thoroughly under cold water. Pat dry with paper towels or use a salad spinner to remove excess moisture.

  2. In a food processor or blender, combine the fresh dill leaves, parsley leaves, toasted nuts, and grated Parmesan cheese.

  3. Pulse a few times to chop the ingredients.

  4. With the food processor or blender running, gradually drizzle in the extra-virgin olive oil and lemon juice. Continue blending until the mixture is smooth and well combined.

  5. Taste the dill pesto and season with salt and pepper to taste. Adjust the consistency by adding more olive oil if needed.

  6. Use immediately as a sauce for pasta, spread for sandwiches, topping for grilled meats or fish, a dip for vegetables, or transfer the dill pesto to a jar or airtight container.
