Air-Fried Crispy Chicken Tacos with Coleslaw and Honey Mustard

Ingredients:

For the Air Fried Chicken Tenders:

  • 1 lb chicken tenders

  • 1 cup panko breadcrumbs

  • 1 cup grated parmesan cheese

  • 2 large eggs, beaten

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • Cooking spray

For the Coleslaw:

  • 2 cups shredded cabbage or coleslaw mix

  • 1/4 cup mayonnaise

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon honey

  • Salt and pepper to taste

For the Honey Mustard Sauce:

  • 1/4 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon whole grain mustard

  • 1 tablespoon honey

  • Salt and pepper to taste

For Assembling:

  • 8 small flour or corn tortillas

Instructions:

  1. Preheat your air fryer to 400°F (200°C).

  2. Season the chicken tenders with salt and pepper.

  3. Set up a breading station with two shallow bowls: one with panko breadcrumbs and parmesan mixed with paprika, garlic powder, onion powder, salt, and pepper, and one with beaten eggs.

  4. Dredge each chicken tender in eggs, then coat evenly with the panko parmesan mixture, pressing gently to adhere.

  5. Lightly spray the air fryer basket with cooking spray. Place the breaded chicken tenders in a single layer in the air fryer basket, making sure they are not overcrowded.

  6. Air fry for 8-10 minutes, flipping halfway through, or until the chicken tenders are golden brown and cooked through.

  7. Place the shredded cabbage (or coleslaw mix) in a large bowl.

  8. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper to make the coleslaw dressing.

  9. Pour the dressing over the cabbage and toss until well coated. Set aside.

  10. In a small bowl, whisk together the mayonnaise, Dijon mustard, whole grain mustard, honey, salt, and pepper until smooth and well combined. Set aside.

  11. Warm the tortillas according to package instructions.

  12. Place a spoonful of the coleslaw mixture on each tortilla.

  13. Top with an air fried chicken tender.

  14. Drizzle with honey mustard sauce and serve the air fried chicken tender tacos immediately.
