Garozzo’s Kansas City - Chicken Spiedini with Amogio Sauce

Ingredients

For Chicken Spiedini:

  • 4 boneless skinless chicken breasts

  • 2⁄3 c. breadcrumbs

  • 1 tbsp. Italian seasoning

  • 1 tsp. parsley

  • 1⁄3 c. grated parmesan

  • 2 tsp. lemon zest

  • 2 garlic cloves, minced

  • 2 tbsp. olive oil

  • 2 tbsp. melted butter

For the Amogio Sauce:

  • 1⁄2 c. olive oil

  • 4 tbsp. butter

  • 1⁄4 c. fresh lemon juice plus 2 tsp. zest

  • 2 garlic cloves, minced

  • 1 tbsp. minced shallot

  • 1 tbsp. chopped fresh parsley

  • 1 tbsp. chopped fresh basil

  • 1⁄2 tsp. red pepper flakes

  • salt and pepper to taste

Instructions

  1. Pound out the chicken breasts between two pieces of plastic wrap until they’re about 1/8” thick. Season with salt and pepper.

  2. On a paper plate, combine breadcrumbs, cheese, parsley, Italian seasoning, garlic, and lemon zest.

  3. Combine melted butter and olive oil in a shallow dish.

  4. Dip chicken in butter mixture, then coat with breadcrumb mixture.

  5. Tightly roll up each piece of chicken and cut into 1” pieces.

  6. Thread onto metal or wood skewers (if using wood, soak the skewers for at least an hour first so they don’t catch fire on your grill).

  7. Grill on medium-high heat for about 5 minutes on each side or until chicken is cooked through.

  8. For the sauce, combine all ingredients but salt and pepper in a saucepan and heat over medium heat until bubbling.

  9. Reduce heat and simmer for five minutes.

  10. Remove from heat and add salt and pepper to taste.

  11. Serve on the side of your Chicken Spiedini and dip as much and as often as you’d like!
