No Bake Energy Balls

Ingredients:

  • 1 cup pitted Medjool dates (about 10-12 dates)

  • 1/2 cup rolled oats (use gluten-free oats if needed)

  • 1/4 cup peanut butter (or almond butter)

  • 1/4 cup unsweetened shredded coconut

  • 1 tbsp chia seeds (optional for extra nutrition)

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon (optional)

  • Pinch of salt

Instructions:

  1. Add dates, oats, peanut butter, shredded coconut, chia seeds, vanilla extract, cinnamon, and salt to a food processor.

  2. Pulse until the mixture comes together and forms a sticky dough. Scrape down the sides as needed.

  3. Scoop out about 1 tablespoon of the mixture and roll it into a ball between your palms.

  4. Repeat until all the dough is used.

  5. Place the energy bites on a plate or baking sheet and refrigerate for at least 30 minutes to firm up.

  6. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
