Old Bay Shrimp Salad
Ingredients:
For the Salad:
1 lb large shrimp, peeled and deveined
1 tablespoon Old Bay seasoning
1/2 cup celery, finely diced
1/4 cup red onion, finely diced
2 tablespoons fresh parsley, chopped
For the Dressing:
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon Old Bay seasoning
Salt and black pepper to taste
Instructions:
Heat olive oil in a skillet over medium heat.
Add the shrimp and season with 1 tablespoon of Old Bay. Cook for 2-3 minutes per side or until the shrimp are pink and opaque.
Remove shrimp from heat and chop the shrimp into bite-sized pieces.
In a large mixing bowl, combine the diced celery, red onion, and chopped parsley.
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, and 1 teaspoon of Old Bay seasoning. Adjust the seasoning with salt and black pepper to taste.
Add the chopped shrimp to the bowl with the vegetables.
Pour the dressing over the shrimp and vegetables, and gently toss to combine until everything is well coated.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve the shrimp salad on a wrap, a bed of lettuce, in a sandwich, or with crackers.
