Chili Oil Chicken Salad

Ingredients:

  • 4 cups rotisserie chicken, shredded or chopped

  • 2 tablespoons chili oil, adjust to taste

  • 6 tablespoons mayonnaise

  • 1 medium shallot, finely minced

  • 2 scallions, sliced thin

  • ¼ cup fried onions

  • Salt, to taste

Instructions:

  1. Shred or chop the rotisserie chicken into bite-sized pieces and set aside in a mixing bowl.

  2. In a separate small bowl, whisk together the chili oil and mayonnaise until smooth and well combined.

  3. Add the finely minced shallot to the shredded chicken.

  4. Pour the chili oil mayo mixture over the chicken and toss until everything is evenly coated.

  5. Gently fold in the fried onions and scallions to the chicken salad for added crunch and flavor.

  6. Add salt as needed, adjusting the seasoning to your liking.

  7. You can serve this chili oil chicken salad on a bed of greens, in sandwiches, or with crackers.
